Liver Cancer

Liver cancer is a major cause of death in the United States, and in 1992, the last year for which statistics are available, 43,967 people died of liver diseases in the Untied States. Of these, 25,263 were caused by chronic liver diseases and cirrhosis, 9,555 were due to primary liver and bile duct cancer, and the remainder were caused by virtual hepatitis and other liver diseases. In 1994, primary and secondary liver cancer cost $2.4 billion for treatment. Liver diseases are the seventh leading disease-related cause of death in the United States, yet the funding to find cures and means to prevent these diseases remains small in spite of the scope of the problem (Johnson, 1995).

The onset of cancer has been linked to a number of dietary issues, with certain foods seen as contributing to the development of cancer cells in the human being. At the same time, the specific relationship between diet and cancer remains largely unproved at this time, though the public may believe that our diets are loaded with cancer-causing contaminants. The only element found to lead to increased cancer risk is high alcohol consumption. Alcohol consumption is associated with about three percent of the cancers in this country, and heavy drinkers show an increased incidence of cancers of the liver, pancreas, esophagus, larynx, mouth, and throat. As little as one or two drinks a day several times a week contributes to a higher incidence of breast cancer (Van Itallie, 1989).
