es in the number of viable bacteria that were able to thrive on the three media under anaerobic conditions. Nestle contained two species of bacteria which thrived under anaerobic conditions but showed poor growth under aerobic conditions; Yakult and Danone has similar bacterial content. Each sample grew on each medium but with differences in numbers present: Muller contained the least lactobacilli and Danone and Yakult contained similar amounts; Nestle contained the most lactobacilli. Bacteria able to utilize the fermentable carbohydrate were, producing the following acids include: 1a (lactose, galactose, cellobiose), 2a (lactose, mannitol, galactose, and cellobiose), 3a (lactose, galactose, and cellobiose), and 5a (lactose, galactose, and cellobiose). Bacteria 1a, 3a, and 5a could be either lactis, acidophilus or ruminis. Bacteria 2a could be agilis, casei, plantarum, or sake. Bacteria 6a is not lactobacillus. Colony counts effected by time on the refrigerated products include: colony counts were higher in the Danone, Optimil, and Muller sample and they decreased in the Nestle sample.

Findings Related Study Introduction, Rationale, and Literature

The Gram positive rods found in the Danone, Optimil, Nestle and Yakult samples are likely to belong to the lactobacillus genus as they are commonly used in the dairy industry. All lactic acid bacteria grow anaerobically however they will tolerate oxygen thus they are called aerotolerant anaerobes. The lactobacillus genus vary in size and shape with a fermentative metabolism with at least half of the carbon end product being lactate (Cullimore 2000).

The Gram positive diplococci could belong to the micrococcaceae family. These are widely distributed in the environment. They can generally utilize carbohydrate or amino acids as a source of carbon or energy. There are 3 genera commonly recognized within this family, micrococcus, staphylococcus and planococcus. However micr...
