Of course, baking potatoes is only one method of preparing one of man’s most versatile vegetables. Potatoes with the highest levels of starch, such as the Russet, are the variety most suitable to baking. The potato plant grows naturally in the Peruvian Andes, but it was not until the sixteenth century that Spanish explorers introduced the vegetable to Europe. Its cultivation spread rapidly in temperate climates and it was introduced in the United States in the eighteenth century.
