The pizza segment of the fast food industry

staurants in recent years has been to inject new life into a concept that many company executives concede has grown tired. The 1991 introduction of the Pizza Hut Cafe was expected to herald mass conversion to a new concept, but the concept is now being used to test a range of new amenities in menu, service, and decor. One of the new amenities is the lunch buffet, reintroduced in 1992 and available in all 2,200plus company stores.

Pizza Hut also sees delivery as a significant growth opportunity. The chain already delivers from well over 3,500 units and plans to add more than 1,000 new delivery/carryout sites over the next few years. The service accounted for more than $1.2 billion in domestic sales in 1992, and more than onequarter of the chain's estimated $4.45 billion total domestic system sales during the same year (Casper, 1993, p. 127).
